Thing is, as far as I know, low-cost pilots aren't organized, so they can't really strike...

They are to an extent, but not all are within the same union.
But I am talking about Norwegian, I bet Ryanair is not unionized, Norwegian probably only is for the Scandinavian crew.

I don't think Ireland has unions, didn't Norwegian move to Ireland to escape things like this?

Did some research, and apparently Norwegian started a subsidiary in Ireland for their long-haul operations.

That's a long time ago. I know a pilot in Widerøe, he says Norwegian treats their pilots horribly
