GIMP is like impossible to use. I have X11 that I'm apparently supposed to install, and then I opened up GIMP, but now I just get a command prompt.

Maybe you should try Seashore. It's a native mac image editor based on gimp that is developed in Cocoa and needs no X11 stuff.
