Now, I know I'm a noob in this game, but I couldn't find anything on this topic: What happens to phased-out aircraft? Is the production stopped or can't you use them anymore?

The production stopped, but still you can use them if you have them.

The phase-out is according to the withdrawal years. And the year end, the production stop. The planes owned by players are still functionable as usual.

Bascially you can no longer order the aircraft. Nothing special happens really! If you have already ordered them they will continue to be delivered, and you can still sell them on the market.

another question: Why on earth should you scrap your planes? Do you get money for them?
