How do i remove old hubs i no longer use?

Hubs are.
You have to have 25 gates at the one airport though.

and how do i make a hub? and what's the difference between a hub and a focus city? I have 4 places with over 95 gates (in active use, not some garbage gateholding scheme). Anything else i need to know?

Hubs are higher priced, but as far as I know, you don't have to pay to put extra gates onto that hub. (or pay a minimal cost)
Whilst Focus Cities you have to pay the full price.

I am not really sure about this though.

ok the point being i have 2 hubs which i have no gates at, and I cant get rid of them and expand elsewhere,  Is this correct?

Patience is about all you need along with 2 things:

User ID/Airline ID
Airport Code

Then they may magically disappear. :)

You really shouldn't have done that, I'm actually getting quite hungry.

What about the hubs thing? Is there any way to create them, and what do we get from it? @AMS, I've got more than 30 gates, but nothing that looks like a hub thing.

That's because AMS (for example) was your orignal hub. (I.e. You didn't pay for it.)
