I wish I could replace a plane from multiple routes by buying a plane and just changing them out with a "click" From what I see I have to redo every route with a new plane that an old plane had? Or is there a way to sub in a plane for a replacement that I havent seen?

See the suggestion forum, specifically the topic labelled [Read this first]. This has been suggested numerous times, and IIRC, is on the to-do-list with an unknown ETA.
